WHAT IS SMASH AFTER THE MASH?

One day, we had a hankering for a smash burger. Because we don’t have a hood, we could not do it in our kitchen. So we got an outdoor griddle and we smashed. And it was good. And we wanted to share it with the world. So our smash burger pop up was born! But what about the name? Our legal name is Off Ramp LLC (find our owner Nick and maybe he will tell you why 😉 ) and one of our crew remembered that at the Off Ramp Music Cafe (now El Corazon), there used to be a breakfast called Hash After the Bash. Smash After the Bash? But what is the bash? *shrugs* Wait! We brew beer! Smash After the Mash!

But what is the mash? Mashing is the step in brewing where we combine cereal grains (mostly malted barley but other cereal grains can be oats and wheat and sometimes we even use rice and corn) with hot water to form a porridge-like mixture called… the mash. But what does the mash do? Per Craft Beer & Brewing: “It is in the mash that malt and other cereal starches are transformed into sugars and proteins and other materials are made soluble, creating the sweet fermentable liquid called the wort.” We then boil the wort, add hops, and ferment away. When the yeast has done it’s job, we have beer!

So there you have it! We mash and then we SmasH!
